Our goal is to make wines that showcase the unique character of the Pietra Santa vineyard by respecting the complexity of the fruit and the natural terroir of the Cienega Valley.
Twenty First Century Winemaking at the Estate
Completed in 2000, the “Mission-Style” Winery combines traditional, fine winemaking methods and state-of-the-art technology. Special attention is paid at every level to ensure the finest grapes are used – from farming with environmentally sustainable methods, intensive pruning and trellising, to careful field cluster selection and hand harvesting. After harvest the grapes are fermented in small tanks, and lots are kept separate through barrel aging.
Cory Waller, Winemaker
Cory grew up in nearby Hollister and spent his childhood not far from the Pietra Santa estate. Soon after college, he became passionate about wine, particularly Pinot Noir, and decided to make winemaking his career. Learning from some of the most renowned winemakers in the United States, Cory honed his craft at Etude Winery in Napa before moving to Oregon to work for Soter Vineyards, Bergstrom, and J.K. Carriere with two stints working harvests in New Zealand in between. Five years ago, Cory settled back in California, to work at Calera Winery, just a few miles from Pietra Santa. Cory is very enthusiastic about leading the winemaking at Pietra Santa and believes the estate has the potential to set a benchmark for producing great California Pinot Noir. His philosophy, as learned from his mentors, is to above all else, “make the wine first.”
