This dish is delicious, very easy to make and is a perfect appetizer or a tasty lunch salad. Expect a combined prep and cooking time totaling a mere 20 minutes. Garnish with a lime wedge and serve this dish with a dry style Rose or a crisp white wine such as Pietra Santa Chardonnay.
1 lb raw shrimp – shelled and cleaned (small to medium size)
½ cup mayonnaise
¼ cup Thai sweet chili sauce
3-5 drops hot chili sauce
½ cup cornstarch
½ cup buttermilk or regular milk
¼ cup chopped scallions
Lettuce leaves for serving
Vegetable Oil for cooking shrimp
Thoroughly wash and dry shrimp. Dip each shrimp piece in milk and then coat with corn starch. Fry for 3-5 minutes in medium hot pan, until shrimp are lightly browned. Place on a paper towel for draining.
Mix the mayo, chili and hot sauce. Gently blend with the shrimp. Serve the shrimp in lettuce leaf cup and top with chopped scallions.
