It may seem surprising to have a burger recipe as a pairing suggestion for a Signature Collection wine, but you won’t be disappointed! For comfort food that is elegant and special enough to serve guests, this is it! Add the jewel of Signature Collection Cabernet Sauvignon, and you have an amazing meal. Serves 6-8 people.
Leek and Fennel Relish
1 fennel bulb
1 tablespoon sugar
Salt and Pepper to taste
1 tablespoon good quality olive oil
Rinse leek making sure to get the dirt between the layers. Cut into thin, even slices. Prepare the fennel the same way as the leek trying to keep the slices at an even thickness. Preheat a skillet using high heat for 2-3 minutes. Add the sugar and wait for approximately one minute or until it has caramelized. Lower the heat to medium and add the oil and the vegetables. Sauté for 8-10 minutes stirring occasionally until the leeks get browned and a little crispy. Set aside and let cool to room temperature.
Truffle Butter Stuffed Burger
2 pounds of your best quality ground sirloin
6 – 8 freshly made French rolls
3-4 fresh black truffles (canned may be substituted), finely minced
2 tablespoons fresh, chopped Italian parsley
Salt and pepper to taste
1 stick of unsalted sweet cream butter – at room temperature
In a small bowl mix the butter and the truffles. Make 6 – 8 teaspoon sized balls reserving any leftover butter for toasting the buns.
In a large bowl add the ground sirloin, parsley, salt and pepper. Mix with your hands. Form 6-8 evenly sized balls, then flatten them to about ½ inch thick. Place a butter ball in the middle of each burger and wrap the patty around the butter carefully sealing, so that butter won’t escape during cooking. Flatten patties before placing on a hot grill.
Cook 2-3 minutes per side for medium rare. Butter the buns with the leftover truffle butter and toast on the grill. When ready to assemble, heap a large scoop of the relish on top of the burger and serve with your favorite traditional condiments. Serve with Pietra Santa Zinfandel or Signature Collection Cabernet Sauvignon.
